The oil mill structure is completely self-sufficient thanks to an adjacent photovoltaic grid 100 KW/h, it absorbs direct sunlight energy without producing C02 emissions. The olives are harvested in October and November, with gentle methods that do not modify the olives and maintain the integrity and the quality. Transport and milling take place on the same day, in order to keep its natural freshness. The oil is conserved 3-5 meters below ground level in stainless steel cisterns. The lower level includes the supply of machines for the processing of olives and the premises for the storage of oil and, upstairs, a space dedicated to direct sales.
